Alfredo

I have finally done it. After years of making Alfredo however I felt like making it with whatever I had on hand, I made myself stop and measure, and actually write down a recipe for this yumminess. It turns out perfectly thick and creamy, and is perfect to mix in a little left-over grilled salmon. A couple years ago I started using brown rice pasta. It is lighter, and doesn't make me feel so yucky when I'm done eating, especially when I'm using a sauce like this:) It should make enough to cover one pound of pasta.

Alfredo
1 stick butter
1/2 tsp chopped garlic
1/4 C flour
2 C half & half, heavy cream, or milk
4 oz cream cheese
1/2 C parmesan/Romano shredded cheese
1 tsp salt

In a skillet, melt butter over medium heat. (not too hot, or your butter will brown) Add garlic and sautee a minute. Whisk in flour until mixture is smooth. While stirring, slowly add cream, milk, or half & half. Turn heat down just a little so the mixture doesn't boil. Stir continuously until mixture begins to thicken, 3-5 minutes. Add cream cheese, and stir until it is incorporated. Add cheese and salt to taste. Serve immediately with pasta of choice. Also good with chicken or seafood:)

Chocolate Chip Cookies

Wow, only been a year since I posted here. How about a great cookie recipe? I got it from an ad that came in the mail for a cookbook. There was a picture of the book opened up to this recipe. It was fuzzy and little, but I wanted to try it, so I wrote down what I thought it said, and then tweaked it for my purposes. The.most.amazing.cookie. If I were a little more creative, I would come up with a better name for these cookies because they are not just any chocolate chip cookies. These are like chocolate chip cookies on steroids because they are big, crunchy and chewy and filled with all kinds of chocolate. I try to make other cookies sometimes, but I always end up making these.

1 1/4 C white sugar
1 1/4 C brown sugar
3 sticks butter
Beat this all really good until really fluffy.
2 eggs
1 Tbs vanilla
Beat it really good until it's fluffy again.
1 tsp baking soda
1 tsp baking powder
1/2 tsp salt
4 C flour
Beat until all ingredients are mixed together good.
Stir in:
1 C semi-sweet chocolate chips
1 C chopped Hershey's milk chocolate bar
1 C m&m's

Bake 9-12 min. at 375. Take them out just when the tops start to turn golden.
